The wines drink accordingly denser, deeper, and longer than village-level Puligny has any business being. Thierry Pillot’s tiny negoce label, run alongside Domaine Paul Pillot in Chassagne, treats the site with restraint: organically farmed fruit (not juice), native-yeast fermentation in 350- and 500-liter barrels, twelve months on lees and six in stainless before bottling. The 2021 vintage was cool and classical exactly the kind of year this site shines in.
