Les Caillerets takes its name from the stones. It is the caillou-strewn midslope running toward the Puligny border, and it gives Chassagne its most Puligny-like wine: less breadth, more line. This is one of the bottles people reach for when they want to argue that Ramonet is the best address in the village, and the argument holds up. 2021 was brutal on growers – frost, cold, minuscule yields – but it handed back a style of white Burgundy that had gone missing during the warm run of the 2010s: lower in alcohol, high in acid, built vertically rather than horizontally. Native ferment, restrained oak, no shortcuts. Cellar it.
