Domaine de Montille is one of the Cte de Beaune’s most revered producers organic since 1995, biodynamic for about two decades, and under Etienne de Montille a house that has shifted decisively toward purity, lift, and gentle extraction. Les Aigrots is a top Beaune 1er Cru on a gentle east-facing slope at the foot of the hillside, an orientation that gives the Chardonnay its mineral lift, and Montille’s bottling shows it: chiseled, mineral, and tightly wound, with white orchard fruit, citrus oils, and a long stony finish.
