Champ Divin is a small biodynamic estate in the Jura, certified Demeter since 2011 and farmed entirely without synthetic inputs. ‘Cuve Castor’ is their flagship blend: roughly half Chardonnay from deep clay-limestone, half Savagnin from grey marl, vinified in the ouill (topped-up) style – which means no flor, no oxidative funk, just bright and direct fruit. The result has been called a ‘baby Vin Jaune’ for its complexity, but with the freshness dial cranked up. Expect lemon, green apple, peach pit, and a quiet thrum of baking spice. A great way to meet Jura whites without diving straight into the oxidative deep end.
