The white counterpart to Cara Sur’s Criolla reds, this is a field blend of heirloom Argentine white grapes Torrontes Sanjuanino, Torrontes Mendocino, Malvasia, and Maticha grown on old pergola-trained vines between 1,500 and 1,750 meters in the Calingasta Valley of San Juan. Pancho Bugallo and Sebastian Zuccardi ferment with native yeasts and age in concrete, neutral oak, and 50L demijohns, all on the lees and bottled unfined and unfiltered. The result is a crisp, complex, distinctly southern-cone white: ripe stone fruit, tangy citrus, fresh herbs, and a salty, mountain-water finish. There’s nothing quite like it.
