Roditis is one of Greece’s most widely planted native white grapes, and Kontozisis Organic Vineyards has been farming it organically in Karditsa, Thessaly since 1991. “Drop by Drop” named for a Greek folk phrase about patience and persistence is the family’s everyday white in their natural-wine series. A cold pre-fermentation extraction, wild yeasts, no press, and only a touch of sulfur at bottling yield a clean, citrusy white with zingy lemon, ripe apricot, and a salty-sea-spray finish. Easy to drink, hard to put down.
