Winemaker Vincent Ruiz inherited vines worked without chemicals for over 20 years, applying long pressings, whole-cluster maceration in concrete and ceramic, and aging on fine lees without racking. The result is delicate complexity that pairs beautifully with seafood or Alpine cheese.
