Domaine de l’Enclos is a newer voice in Chablis with deep roots the project of Romain and Damien Bouchard, farming organically across some of the appellation’s most prized parcels. Beauroy is a 1er Cru on Chablis’s left bank, west of the Serein, with the cool exposure and Kimmeridgian limestone that give the wines their telltale tension. This bottling sees only a touch of older oak; the fruit, the chalk, and the sea-shell snap of the soil do the talking. Drink with anything from the sea.
