The Tradition is Domaine Courbet’s calling card, a blend of about 75% Chardonnay and 25% Savagnin from the Cotes du Jura. The Savagnin is aged under a veil of yeast (sous voile) for savory, nutty depth, while the Chardonnay is barrel-aged and topped up for freshness, then blended just before bottling. This family estate dates to 1869 and is run by Jean-Marie and Damien Courbet, who farm biodynamically on the slopes below Chateau-Chalon. The 2022 splits the difference between fresh and oxidative beautifully. A perfect Jura starter.
