Caroline Morey daughter of Jean-Marc Morey and wife of Pierre-Yves Colin launched her own domaine in 2014 with some of the family’s choicest plots, and Cailleret may be the crown jewel. Sitting just below Le Montrachet at the top of the village, it’s widely considered Chassagne’s most precise and mineral premier cru. From 45+ year-old vines, the wine is fermented and aged in 350L barrels with no battonage, the same patient, oxidative approach that has made the Colin-Morey cellar one of Burgundy’s most exciting addresses.
