The name winks at Chavignol orbiting the town of Sancerre proper, but there’s nothing minor about the wine: old vines across several hillside parcels, farmed biodynamically and raised in large, seasoned oak barrels. It’s Sauvignon Blanc with weight and cut at once, mineral and precise in the taut Mellot house style. This is Sancerre for people who think they’ve already met Sancerre.
