Its name means ‘five grains,’ and the liquid is fermented from exactly that sorghum, rice, glutinous rice, wheat, and corn in earthen pits, some of which have been in continuous use for centuries. Bottled at 104 proof, it is intensely fragrant, with ripe tropical fruit and a mellow, faintly sweet grain body that lands clean rather than harsh. Serve it at room temperature or slightly warmed in small cups, the traditional way, alongside rich food; a little goes a long way at this strength.
