Twelve years in new American oak is only the first act for WhistlePig 12 Year Old World Rye, a rye whiskey finished across three European wine casks. The final blend is a marriage: 63% from Madeira casks, 30% from Sauternes and 7% from Port, married back together at 86 proof in Vermont. Wine casks bend the rye’s spice toward apricot, raisin, date and honey, with caramel and winter fruit up front and dark chocolate closing things out. Age-stated, wine-finished rye at this level remains uncommon, and this bottle is the farm’s calling card for it. Drink it neat or over one large cube; in a Manhattan it carries the vermouth’s weight itself.
