Volans Reposado is a highland tequila from Felipe Camarena, the fourth-generation distiller behind El Pandillo in Los Altos, Jalisco. Made from 100% blue agave and verified additive-free, it rests a few months in American oak ex-whiskey barrels, just long enough to round the agave without burying it. Camarena’s signature triple-water process rain, spring, and well water reads as a clean minerality beneath the fruit. Expect light caramel and ripe pear on the nose, cooked-agave honey and a lick of black pepper across the palate, and a smooth, gently dry close. Bottled at 80 proof, it sips easily neat but keeps enough backbone to lift a top-shelf margarita or Paloma.
