Union Sacre is best known for Alsace-inspired whites, so a Paso Robles Cabernet is a bit of a plot twist, and a welcome one. The winery was founded by two longtime friends who arrived on the Central Coast from opposite ends of the earth: Xavier Arnaudin, a French-trained oenologist and former boxer, and Philip Muzzy, a self-taught designer from Michigan. That French sensibility shows up here as restraint. Fermented in concrete tanks, this is a Cabernet built for drinking now rather than for a decade of waiting, with deep dark fruit, a spice-and-tobacco edge and tannins that stay smooth.
