Mijenta’s Symphony Series No. 3 is an 18-month aejo matured in custom-built symphony barrels composed of oak staves from Minnesota, Missouri, Pennsylvania, and Virginia a complex, multi-terroir wood ecosystem that continuously evolves the spirit as it matures. The result is something genuinely unpredictable and layered, built on a foundation of fully mature Highland agave from Jalisco. Bottled at 45% ABV, the nose opens with cooked agave, vanilla, semi-sweet chocolate, caramel, rose petals, and dulce de leche. The palate is silky and sweet with cooked agave, chocolate, orange, and rose petals carrying through to a long, satisfying finish.
