Highland Park 30 Year Old is a single malt Scotch from the Orkney Islands, matured for three decades in sherry-seasoned European and American oak. This is an old, limited release a small parcel of casks married and bottled at a strength that shifts a little from year to year, with no age or proof taken for granted. The long time in wood builds a deep, layered pour: dried fruit, dark chocolate, and poached peach over the faint heathered peat smoke that runs through everything the Orkney distillery makes.
