This experiment using local cool climate Shiraz has become a cult-favourite, perfectly balancing sweet fruit and ginny goodness. Available for a short time with a specially commissioned label by local illustrator Ellen Porteus.

Each time we make a batch of Rare Dry Gin we find ourselves with many kilograms of organically grown oranges that have essentially been steamed in gin, distilled with the nine other botanicals for seven hours. Four Pillars Marmalade was our first Made From Gin product, and this orange peel marmalade has a deliciously fragrant and spicy flavour.
