The half-bottle is an underrated format, and white Burgundy is where it earns its keep: it lets you open something serious on a Tuesday without committing to the whole evening. This is Ramonet’s village Chassagne, drawn from parcels across the appellation, native-fermented and raised mostly in older barrels – a scaled-down read on the domaine every other grower in the village measures themselves against. 2022 was warm and abundant but held onto its acidity, so the wine is generous without being heavy. Half-bottles also mature faster, which here is a feature rather than a flaw. Two glasses, no regrets.
