Jrme Coessens is a grower-Champagne purist working in the Aube’s Cte des Bar, far south of the famous chalk hills. His project follows a single, exacting idea: one vineyard, one variety, one expression. Every cuve comes from Largillier, his single, mostly Kimmeridgian-limestone parcel the same geological vein that runs through Chablis and every bottle is 100% Pinot Noir. Les Sens Boiss is the oak-aged cuve, partially vinified in barrel to add textural depth and toasty complexity to the clay-driven density and limestone-driven salinity. The 2020 vintage is generous and complete, with notes of citrus confit, mirabelle, baking spice, and a faintly peppery, deeply mineral finish.
