Les Chaumees sits at the top of Chassagne, on the high, stony, limestone-rich slopes near the village’s old quarry. Where Cailleret is all linear precision, Chaumees tends to wear its aromatics on its sleeve more openly floral and perfumed, with anise, white blossom, and orchard fruit out front. Caroline Morey, who launched her own label in 2014 after her father’s retirement, farms 45+ year-old vines here and uses the same patient approach as her husband Pierre-Yves Colin: 350L barrels, indigenous yeasts, no battonage, unfined and unfiltered. The result is succulent and round but tension-filled, with palate-staining intensity and a great line of acidity.
