Albillo is a grape most people have never heard of a rare Spanish white long written off as rustic country-wine filler. Juan Antonio Ponce thinks it deserves better. Back home in Manchuela, high on the chalky central plateau, he farms old Albillo vines biodynamically and treats them with the seriousness usually reserved for grand crus: whole-cluster fermentation, neutral oak, barely any sulfur. What comes out is pure, textured, and quietly mineral a white that rewrites what this forgotten grape can do.
