Back home in Manchuela, high on the chalky central plateau, he farms old Albillo vines biodynamically and treats them with the seriousness usually reserved for grand crus: whole-cluster fermentation, neutral oak, barely any sulfur. What comes out is pure, textured, and quietly mineral a white that rewrites what this forgotten grape can do.
