In 2005, Heaven Hill did something nobody had done since Prohibition: released a genuinely new style of American whiskey. Bernheim made soft winter wheat the primary grain instead of the supporting player, and twenty years later it’s a category. This anniversary bottling marks the occasion with a 10-year-old Kentucky straight wheat whiskey at 115 proof considerably more age and more muscle than the standard release. Wheat gives it that soft, bready, pastry-like sweetness; the decade in oak layers on cinnamon, vanilla, molasses and butterscotch, and the proof pushes a peppery kick through the finish. Drink it neat with a few drops of water to open it up, or over one big rock if you want the heat to settle. It makes a formidable Old Fashioned too, if you can bear to mix it.
