An experimental American single malt from Waco, Texas, where Balcones Distilling substituted red wine and ros wine yeasts alongside their house malt whisky yeast during fermentationan unusual move that produces fruity esters more typical of winemaking than whiskey distilling. Aged four to five years in first-, second-, and third-fill bourbon casks. The result is a whisky with soft berry and forest-fruit notes you wouldn’t expect from a grain spirit. Bottled at 55% ABV. Created to commemorate the 2024 solar eclipse visible from Waco.
