Finished in ten-year-old Moscatel de Setubal pipes from Portugal, Woodinville Moscatel Finished is a straight bourbon that trades some of its Washington backbone for wine-cask sweetness. The base is Woodinville’s flagship bourbon, 72% corn, 22% rye and 6% malted barley all grown on the Omlin family farm in Quincy, Washington, moved into those old fortified-wine casks for a second maturation and bottled at 100 proof. The finish pulls dried apricot and orange peel onto the nose, then honey, toffee and candied nuts across the palate with a curl of fennel on the way out. Rich but balanced, it drinks best neat or over a single large cube, after dinner rather than before.
