Sespe Creek Distillery smokes 65% of the mash flaking-grits corn over a low mesquite burn for two full days, adds fire-roasted corn and malted rye, then double-distills the wash in copper pots before new charred American oak does its work. The pour lands at 98 proof: campfire sweetness up front, caramel corn and toffee underneath, rye spice and dry smoke on the way out.
