Waterhorse Ridge sits at 1,700 feet on Stewart Ridge in the Fort Ross-Seaview AVA, with the Pacific in view a pretty unusual address for Cabernet Sauvignon in California. Jesus Velasquez and Patricia Greer planted the two-acre site in 1997 and farm it organically. The cool, marine-influenced exposure produces a Cabernet that’s structured and high-acid rather than sun-soaked and plush, and Erin Mitchell and Randy Czech’s hands-off approach in the cellar lets the site speak for itself.
