Founded in Healdsburg by a collective of friends, Tinto Amorio works with organic vineyards throughout the state, making small-batch wines with a distinctly Californian energy. Monje is a skin-contact blend of colombard, gewrztraminer, zinfandel and albario. Whole berries were added to a stainless steel tank for semi-carbonic fermentation for 7 days before being pressed off the skins. Pair with paneer tikka masala, grilled prawns, or a citrusy kale salad.
