Beginning in 2010, Springbank began releasing two vattings per year of a twelve-year-old cask strength malt, aged in a combination of ex-bourbon and ex-sherry casks at around a 60:40 or 70:30 ratio (depends on the vatting). The distillery releases one in Winter/Spring and one in Summer/Fall.
Tasting Notes:
Nose: A sweet and inviting introduction to this dram, we have notes of fruit salad candy, raspberry ripple, dried mango, frosting and dark chocolate.
Palate: The complexity builds in the palate with notes of smoked cayenne pepper, crushed chillies, toffee and charred steak.
Finish: Gentle peat smoke emerges in the finish, along with notes of pink grapefruit, cocoa powder, glazed cherries and salted pretzels.
“Immediately lots of brine and soft wood smoke. Subtle aromas of tobacco, triple sec and dark chocolate go hand in hand with wet rocks and limestone. The palate is fat and oily, with pepper, peat and caramel. A warming embrace, with lots of spices, but also oranges. Not for the faint-hearted, but very rewarding for those who dare.” – Thijs Klaverstijn, Distiller
