WHY:Siembra Valles is the import label for Tequila aficionado and advocate David Suro, contracted from one of Jalisco’s best distilleries: NOM 1123 Cascahuin.The ancestral edition uses production methods that would have been used a century ago to make ablanco histrico,with an intensity of flavor and unique character unlike anything in today’s market. Smoky, savory, earthy, and bright, there’s a lot to take in with every sip.

HOW:Using production methods more akin to mezcal, the Siembra Valles is made by roasting the blue agave pias in an underground pit, macerating by hand, and fermenting via natural air-born yeast in large wooden vats with the fibers included. Distillation is done in a wooden Filipino-style still and the spirit is rested in glass for six months before bottling.
