Scuppoz is dialect, from the Valle Castellana in Abruzzo, for the clink of glasses that calls everyone to a toast. The distillery borrowed the name in 1982, set up at Campovalano di Campli beneath the Monti della Laga, and this amaro was the first bottle they made. It is built on herbs and roots gathered on those mountains, infused and naturally sweetened, with no dyes or preservatives. It tastes like where it comes from: chamomile and mint up front, orange and rhubarb underneath, and a clean bitter finish that knows when to stop. Gentler and more aromatic than the big city amari, which makes it dangerously easy after a long dinner. Serve it cold, straight from the fridge or the freezer, in a small glass.
