Fernet, a famously bitter style of Italian digestivo, is one of Scarlet founder Tatsuya Motonagas most beloved amaro categories. With roughly half of its thirty botanicals grown onsite at Iseya Distillerys Kanagawa farm, this Fernet is a true labor of love. Because the use of gentian is restricted in Japan, botanicals such as chicory and aloe are used to provide the expected bracing bitterness, offering a fresh interpretation of a classic category.
