TheELIAcuve is made from theColombardgrape, which has the particularity of ripening to between 9 and a maximum of 11 alcohol. By harvesting about a week earlier than conventional IGP Ctes de Gascogne grapes and stopping fermentation before all the sugars are converted, the alcohol content is kept at 9. This is an entirely natural process with no technical dealcoholisation involved.
