Sonoma County is blessed with a long growing seasonwarm days, cool nights and minimal rainwhich present ideal conditions for ripening grapes while preserving their acidity. The resulting wines demonstrate the perfect balance of fruit, delicate body, crisp acidity and a lingering, elegant finish. The fruit is harvested by hand in small containers and whole clusters are pressed to bring out pure aromas and flavors.
Primarily composed of Chardonnay, with some Pinot Blanc, our Blanc de Blancs has a pale straw color, tiny bubbles and aromas of green apple, citrus and white flowers. The palate is crisp and dry with a long mouthwatering finish. This sparkling wine pairs marvelously with spring rolls, fried calamari or scallops, and makes a wonderfully refreshing addition to cocktails.
