Peter Michael Winery was founded in 1982 on the volcanic ridges of Mount St. Helena. From the start, founder Sir Peter Michael decided that terroir would reign king, and that wines would be elegant and sophisticated rather than powerfully opulent. Today, wines made at Peter Michael are all single-vineyard bottlings with extremely small production. Les Pavots is dark and tantalizing, marked by notes of sappy black fruit, blueberries, mushrooms, tobacco, and truffle. Well-integrated tannins and bright acidity make this wine approachable now, though the wine is certain to age gracefully for the next 15-20 years.
