Ocho Aejo is single-estate aejo tequila from the Camarena family’s highland agave fields around Arandas, Jalisco. Tequila Ocho built its reputation on a simple, radical idea: every release comes from one field, with the ranch and harvest year printed on the label, so the tequila tastes like the place it grew. The aejo rests one year in ex-American whiskey barrels long enough to gather dark cacao, coffee, nutmeg, and salted caramel, short enough that cooked agave still leads. Black tea and pepper open the nose, and a buttery mouthfeel carries a long peppery finish. Bottled at 40% ABV. Pour it neat for the bourbon drinker ready to take agave seriously.
