A one-man, hands-off Burgundy operation worth knowing. Nicolas Faure trained at Domaine de la Romanee-Conti and with Jean-Louis Chave before building his own tiny domaine from scratch around Meuilley in the Cote de Nuits, farming organically and vinifying with whole clusters and minimal sulfur. This Merlot is a deliberate oddity: a Vin de France bottling from a grape you almost never see in Burgundy, made with the same low-intervention, freshness-first approach as his Pinot. Production is minuscule, so it is a fun, off-piste find for anyone who follows the natural side of the Cote d’Or. Drink it on the younger side, lightly chilled if you like.
