Mission Cielo is a 100% Agave Espadn Mezcal its sky-reaching sword-like leaves protect the pia. Typically, an Espadn agave will take 6-20 years to reach maturity. The hearts of the Agave plants are cooked for three days in special pits which are covered with the leaves of the plant. After the hearts are cooked, they are then chopped up and set to begin the fermentation process before the elixir goes through a distillation process using giant mud pots. Once this magical process is completed, we get what we have been waiting for, Mezcal Mission Cielo.
