WHY:Many of todays most intriguing and exciting new agave spirits are uncertified, meaning they dont adhere to the laws and practices that are required to use the terms tequila, mezcal, and raicilla. Sometimes these spirits are made from uncertified species of agave. Other times, the distiller is outside the geographical zone required to use the designation. This uncertified raicilla from Santos Juarez is as old school as Mexican spirits get, made by a small farmer who also grows mangoes, papaya, pomegranates, and other tropical fruits.

HOW:Santos uses a variety of locally-grown agave included Cimarrn, Tolimn, and Ixtero Amarillo, among others. The pias are baked in a stone oven topped with banana leaves, using mesquite for the fire. Theyre then fermented in a vat made of volcanic black stones after being smashed by hand with a wooden mallet. The use of volcanic rocks gives the final distillate a slight mineral note. Distillation is done on a wooden Filipino still with an internal copper saucepan.

WHAT:Mezonte is a revered bottler of Mexican spirits, dedicated to preserving the countrys many distillation traditions and keeping its rural distillers in business. Located in Toliman, Jalisco, Santos Juarez is a restless worker who grows corn, beans, squash and extracts honey in addition to distillation.
