It is with great pleasure that we introduce the High West Pedro Ximnez Sherry Barrel select to the Australian market. The Pedro Ximnez Sherry Barrel select is the only barrel select whiskey from High West that will be launched this year making it an extra special blend.

All our High West barrel selects are a series of small-batch whiskeys finished in second-use barrels. These collections offer incredible balance, complexity, and depth of flavour.

Our Pedro Ximnez Sherry Barrel select is no exception. With flavours of cherry woodsmoke, dates and baking spices coupled with aromas of crisp apple and maple syrup this barrel select is a true representation of the craftsmanship that goes into each barrel.

Age: A carefully crafted blend of 8-10 year old straight whiskeys.
Finished:for 10 months in a Pedro Ximnez Sherry barrel for added depth and richness.
Derived Mashbill:70% corn, 16% wheat, 14% malted barley (TNWhiskey from Tennessee Distilling); and 75% corn, 21% rye, 4% malted barley (from MGP).

Tasting Notes:

Nose: Aromas of apple, cacao nibs and maple syrup offer a sweet and balanced nose.

Palate: Flavourful on the palate, with cherry woodsmoke, dates, baking spices and notes of black tea.
