The name honors the parliament of rooks that has nested in the trees above the distillery for nearly two centuries. Full sherry maturation not a finishing pass builds stewed plum, fig, walnut, and bitter chocolate into the malt, and bottling at 48% ABV keeps the frame firm under all that weight.
