Fortaleza Blanco is an unaged 100% blue agave tequila made in the town of Tequila the way the category worked a century ago. The Sauza family’s fifth generation cooks agave in stone-and-brick ovens, crushes it with a volcanic tahona wheel, ferments in open wood tanks, and runs everything twice through small copper pot stills at NOM 1493. Nothing else goes in no glycerin, no coloring, no sweetener and the glass shows it: cooked agave, lime peel, black pepper, a faintly briny olive edge, and a long, dry fade. Bartenders treat this bottle as a benchmark blanco for good reason. Sip it neat at room temperature first; save the margarita for the second pour.
