Dole is the classic red of the Valais: Pinot Noir and Gamay blended together, with the Pinot in charge. Almost nobody outside Switzerland has tasted one, largely because the Swiss cheerfully drink the entire supply themselves. Beudon’s version comes from a biodynamic estate perched on granite halfway up a sheer mountainside above Fully, reachable only by a rustic private cable car or a three-hour hike with fixed ropes; vines climb toward 900 meters, slopes tilt to fifty degrees, and a tractor simply cannot get there. Native-yeast fermentation, no fining, no filtration, and no interest in making the wine bigger than the place. It’s the Alps in a glass: a high-altitude red that stays light on its feet while tasting unmistakably like it grew somewhere difficult.
