Fuchsentanz means “fox dance,” a nod to some remote, half-forgotten corner of the vineyards, and that offbeat spirit runs through the wine. The Diwalds, organic in the Wagram since the ’70s, blend two soil types here: gravel for citrus lift, loess for riper apricot roundness. Hand-picked, spontaneously fermented in steel, and rested on the lees, it comes out essentially dry, high-toned, and mineral. Riesling for people who like it taut, honest, and easy to drink.
