Del Maguey Mezcal Wild Papalome is a single-village mezcal made from 100% wild agave Papalome. It is produced in the village of San Luis del Rio in Oaxaca, Mexico. The agave is harvested from the wild and cooked in an underground pit oven. It is then crushed by a horse-drawn tahona and fermented in open-air wooden vats. The mezcal is then double-distilled in copper stills. Wild Papalome has a smoky, earthy flavor with notes of citrus and herbs. It is best enjoyed neat or in a classic mezcal cocktail.
