When Chateauneuf got big, ripe, and oaky to chase the market, the Sabon family at Clos du Mont-Olivet just refused to play along. They stuck with elegance, freshness, and the belief that this wine should age. Their 2022 is an old-school field blend, Grenache-led but rounded out with Mourvedre, Cinsault, and a handful of the rare grapes almost nobody bothers with anymore, like Vaccarese and Muscardin. Farmed organically and pulled from a patchwork of lieux-dits across the appellation, it’s all garrigue, dark fruit, and velvety tannins. A classically styled Chateauneuf that drinks well now but has a decade-plus in the tank.
