Les Polissons (“the rascals”) is named for Benot Aymard’s kids, and it’s the loosest, friendliest wine at Clos d’Audhuy the bottle to grab when you want Cahors without thinking too hard about it. 100% Malbec from the organic, biodynamic estate in Lacapelle-Cabanac, vinified with short, gentle maceration at cool temperatures and aged briefly in stainless before early bottling. The point is freshness and fruit: jammy dark berries, licorice, a velvety mouthfeel, and tannins that have been sanded down to almost nothing. A glouglou Cahors, basically. Chill it down 15 minutes if you want.
