Every year during Maltings Season our dedicated team of craftsmen malt barley onsite the old way using this historic floor maltings. The malt produced during our ‘Maltings Season’ results in a wholesome and creamy single malt of exceptional richness of character, a tribute to our founder and the slow craft of his historic maltings, which our team of skilled craftsmen continue to this day, in the pursuit of exceptional flavour.
The Second Edition of Malting Season is crafted entirely on-site beginning with the hand malting of the concerto barley in our traditional floor maltings and finishing with slow maturation in first fill bourbon casks in our earthen floored dunnage warehouses. The result is an extraordinarily smooth single malt, rich, creamy with layers of roasted malt and barley sweetness.
“The nose has inviting aromas of orange blossom, quince jam, and buttery tea biscuits with a rich layer of vanilla icing. The palate is rich and slightly viscous, reminiscent of butterscotch caramels at first, then takes on more toasty scone notes with a bit of black tea tannic grip, cloves, and a faint bramble florality. Tasting Notes:
Colour: Barley gold
Nose: Rich malt sweetness with barely sugar and mandarin enrobed in creamy white chocolate
Palate: Smooth honeycomb infused with citrus and orchard apple, with an enveloping fruit, malt and vanilla finish.
