A select number of barrels that possess a greaterhint of chocolate are infused with just the rightamount of crushed chocolate bean nibs in thebarrel during the finishing process. We dont wantit to overpower the wonderful flavor of bourbonbut simply reinforce the natural chocolate flavor.We dont want our bourbon to taste like chocolate,but rather our chocolate to taste like bourbon. Thisis one of our favorite collaborations with the addition of Olive and Sinclair Chocolate Company.
