The Batic family has farmed Slovenia’s Vipava Valley since 1592, and today they would rather blast hot air through the vines than spray them, building the plants’ own immunity instead of reaching for chemicals. This is Demeter-certified biodynamic Cabernet Franc from an estate that bottles by the lunar calendar and refuses to work under cloudy skies. The fruit comes largely from a 50-year-old clay vineyard, pergola-trained because, after generations of experiments, that’s simply what works here. Aged two years in Slovenian oak and bottled with a light hand, it’s a cool-climate, savory take on Cabernet Franc from right on the Italian border. Nothing about it is ordinary.
